No they did not pair cheese with coffee, but it being a cafe they had some coffee cocktails on the night and people got a complimentary cup of coffee with their ticket. Personally I had a cup of coffee before, cider during and coffee cocktail post-cheese :)

Hi. In the beginning I kept it in a warm room - our utility room, sat on top of the tumble drier which makes the room quite warm when in use. Now it lives in the kitchen. At first I kept it in a bowl covered with cling film, then placed it in a tupperware box after a few weeks. You need to stir it when you feed it as this beats air into it and helps the bacteria develop. Maybe it just needed more time? Some recipes suggest you add a bit of honey to the starter (similarly to adding sugar to a yeast mixture when making pizza or normal bread), this might also help.
